Once you figure out that the big chef is Cristiano Bassani (Bice, Coco Pazzo, Carlucci), the spacious layout, cloth napkins, charming service, and sophisticated bar start to make sense. And the stocky paisano clearly knows the secret to light and crispy crusts. Crusts that stand up to the heat of brick-oven flames and never retreat—even under a judicious layer of buffalo mozzarella, a smear of zesty tomato sauce, a silky blanket of genuinely OMG prosciutto, and a garden’s worth of fresh arugula and cherry tomato halves. 1602 E.
